Five Must-Try Negrense Dishes in Lingaw Restaurant, Manami

Here are five dishes our guests return to again and again: the signatures that capture the soul of Manami.

1. Kansi

Often described as the lovechild of sinigang and bulalo, Kansi is a Negrense staple known for slow-cooked beef shanks simmered with green jackfruit, chili peppers, and batwan: the signature souring fruit of Negros. Rich, hearty, and deeply comforting, this dish is perfect for sharing. Serves up to three.

2. Kinilaw de Negros

A fresh, vibrant delicacy crafted with local coconut vinegar and coconut milk, tossed with freshly caught tangigue, onions, cucumber, tomatoes, and salted egg.

3. Fried Chicken Inasal

An unexpected star, this dish redefines a well-loved favorite. Inspired by Bacolod’s iconic inasal, our version features chicken marinated in garlic, lemongrass, calamansi, and atsuete — then fried to golden crisp perfection. The result: juicy meat with a smoky, tangy profile and an irresistible crunch. It’s comfort food, reimagined the Manami way.

4. KBL Soup (Kadyos, Baboy, Langka)

A Western Visayan staple spotlighting the region’s heritage ingredients: tender pork shanks, earthy kadyos (pigeon peas), young jackfruit, and the distinct tang of batwan. Rustic, flavorful, and authentically Ilonggo.

5. Lutik

A comforting Ilonggo favorite made with mashed squash gently cooked in coconut milk, finished with extra virgin olive oil, cracked pepper, and malunggay. Smooth, creamy, and nourishing.
