5 New Must-Try Signature Cocktails at Manami Resort
There is something undeniably soulful about muscovado: its warm, earthy sweetness, its deep caramel notes, and the story it carries from Negros’ proud sugarcane heritage. At Manami Resort, we celebrate this local treasure by crafting cocktails that honor its roots while elevating it into refined, modern mixes.
Introducing The Muscovado Series: five signature cocktails inspired by flavors of Negros. Each drink is a tribute to the artisans, farmers, and flavors that shape our home.
Here are the five cocktails defining the new Manami experience:
1. Spiced Muscovado Rhum Fizz
Dark rhum, sugar cane, muscovado syrup, fresh ginger, soda water
₱270
A refreshing yet fiery opener to the series. Fresh ginger lays a warm spice on the palate, perfectly balanced by the deep sweetness of muscovado. Topped with soda water for a gentle fizz, it’s crafted for slow afternoons on the cliffside.
2. Calamansi Cooler
Dark rhum, sugar cane, fresh calamansi, muscovado syrup, bitters
₱345
Bright, citrus-forward, and beautifully balanced, the Calamansi Cooler pairs the zest of fresh calamansi with the caramel undertones of muscovado. A dash of bitters adds a sophisticated edge. This is the kind of cocktail that feels like sunshine.
3. Sipalay Sunset
Dark rhum, sugarcane juice, muscovado syrup, lime juice, passion fruit
₱240
Inspired by the golden-hour glow over the Sipalay horizon, this cocktail is tropical indulgence in a glass. Passion fruit brings a juicy brightness, lime adds acidity, and dark rhum carries the mix with confidence. The muscovado syrup rounds everything with a deep, honeyed warmth for that iconic sunset sipper.
4. Halin sa Tubo
Sugar cane, white rhum, fresh calamansi, coconut water
₱230
“Halin sa Tubo,” meaning from the sugarcane, is a minimalist masterpiece. Fresh sugar cane and calamansi blend effortlessly with coconut water for a drink that is light, crisp, and hydrating. White rhum adds subtle warmth. It’s the taste of island purity: clean, understated, naturally sweet.
5. Tagipusuon
Fresh batwan, sugar cane, muscovado syrup, lime juice, coconut rhum, bitters
₱450
Named after the Ilonggo word for heart, Tagipusuon is the most soulful cocktail in the series. Batwan, the Negros’ beloved souring fruit, brings a unique tang, complementing the muscovado’s deep sweetness. Coconut rhum introduces a tropical creaminess, while bitters add complexity. It’s bold, emotional, and beautifully layered.
